Thank you for the tofu tips. My husband and I both enjoy a good crispy tofu but convincing my mom has been tough. If I 'hide' it in a sauce of some sort I can usually get her to eat 2-3 small pieces, haha! I have a lot of veggie/vegan friends and I love to cook so am always looking for new things to try for them. One of my favourite is a plant-based version of Tom Kha Ghai or Thai galangal and coconut soup. Traditionally mad with chicken it is really easy to make veg only. But I use the mini tofu puffs in that and it is so good! :)
