Hope all is well.

I’m from sunny Trinidad and it’s always a good time to go on the grill.

We love a good charred barbeque over here and my family and I have been experimenting. Some things are just good go-to’s like grilled fish or barbeque chicken.

In Trinidad, pickled meats are a big thing. A new kid on the block is this barbeque “pig-tail” (it’s been around for a few years but it is still a new offering)

Fresh seafood is always available here and it’s no stranger to the grill.

We have our barbeque with so many sides….the usual potato or macaroni salads are absolutely necessary. And there are others like macaroni pie and Chinese chow mein , which are a reflection of our fantastic culture.
